1 1/2 cups all-purpose flour 1 teaspoon baking powder 1/2 teaspoon cinnamon 1/4 teaspoon nutmeg 1/8 teaspoon salt 8 tablespoons (1 stick) unsalted butter, softened 1/2 cup granulated sugar 1 egg 1 teaspoon vanilla extract 1 apple, cored, peeled and finely grated (about 1 cup)
Preheat oven to 350°F. Line two baking sheets with parchment paper.
In a medium bowl, whisk together the flour, baking powder, cinnamon, nutmeg and salt.
In a large bowl, beat together the butter and sugar until light and fluffy, about 2-3 minutes. Add in the egg and vanilla and beat until incorporated.
Add in the dry ingredients and grated apple to the wet ingredients and mix just until combined.
Roll dough into 1 inch balls and place 2 inches apart onto the prepared baking sheets.
Bake for 11-13 minutes, until edges are lightly browned.
Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
