1 3/4 cups all-purpose flour 1 teaspoon baking soda 1/4 teaspoon salt 1/2 cup butter, softened 3/4 cup white sugar 2 eggs 1 1/2 cups mashed overripe bananas (about 3-4 bananas) 1/4 cup sour cream 1 teaspoon vanilla extract
Preheat oven to 350°F. Grease a 9x5 inch loaf pan.
In a medium bowl, whisk together the flour, baking soda and salt. Set aside.
In a large bowl, beat the butter and sugar until light and fluffy, about 2-3 minutes. Add in the eggs one at a time, beating well after each addition.
Stir in the mashed bananas, sour cream and vanilla until combined.
Add the dry ingredients to the wet ingredients and mix just until combined, being careful not to overmix.
Pour batter into prepared loaf pan. Bake for 55-65 minutes, until a toothpick inserted in the center comes out clean.
Allow bread to cool in pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
