2 ounces (1/4 cup) good tequila 1 ounce (2 tablespoons) orange liqueur like Cointreau 1 ounce (2 tablespoons) fresh lime juice 1/2 ripe mango, peeled and cubed 1 tablespoon superfine sugar Lime wedge for garnish Salt or sugar to rim glass (optional)
If desired, rim a margarita or rocks glass with salt or sugar. To do this, run a lime wedge around the rim and dip glass upside down in a shallow dish of salt or sugar.
In a blender, combine tequila, orange liqueur, lime juice, mango cubes, and sugar. Blend until smooth.
Add ice and blend briefly to chill.
Pour into prepared glass.
Garnish with a lime wedge.
Use very ripe, sweet mango for the best flavor. Tommy Atkins or Ataulfo (Champagne) mangoes work great.
Adjust sugar to taste depending on ripeness of mango. Start with 1 tbsp and add more if needed.
