Ingredients:

1 3/4 cups all-purpose flour 1 teaspoon baking soda 1/2 teaspoon salt 1/3 cup sugar 1/3 cup brown sugar 1 cup mashed ripe bananas (about 3 medium bananas) 1/3 cup canola or vegetable oil 1 teaspoon vanilla extract 1 teaspoon apple cider vinegar or lemon juice

Instructions:

Preheat the oven to 350°F. Grease a 9x5 inch loaf pan.

In a large bowl, whisk together the flour, baking soda and salt.

In a separate bowl, mix together the mashed bananas, sugar, brown sugar, oil, vanilla and apple cider vinegar.

Pour the wet ingredients into the dry ingredients and gently stir just until combined. Be careful not to over mix.

Pour the batter into the prepared loaf pan and bake for 50-55 minutes or until a toothpick inserted into the center comes out clean.

Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
